Easy, tasty, and healthy breakfast idea – start with a handful of cherry or grape tomatoes. Sauté in a pan with olive oil and harissa until softened, and season with salt & pepper. Make two holes and add in two fresh cracked eggs. Cook the eggs to your liking, then remove from heat. Top with chives and serve with toast. It’s SO good! 😋 And it’s the perfect way to use the last of summer’s tomatoes 🙂
